I mix it with the meat
I've only done one but I removed most of the fat cap before smoking. Left about 1/16" only. I mixed it in the meat when done.
I takeoff most of the fat cap after cooking. Then shread with forks or shredding claws.
mix it in with the meat.

Mix it in, adds a lot of flavor.
I trim enough off pre-cook, so it can just be mixed in at the end. Gigantic pieces during the shred will get pulled out.

I remove most of it, there is no shortage of fat or flavor in pulled pork. The few times I left the fat cap on sandwiches and other fixings like tacos were too greasy, but that’s just my opinion. There’s a lot of fat already throughout pulled pork providing lots of flavor, without becoming a grease ball. if you like greasy food, leave it on if you don’t take it off, it’s just a personal opinion. JMHO

There is usually very little left once it renders during the cook but the mix it in but remove the largest clumps.
Shred by hand with cotton gloves covered with black nitride gloves. I have shredders and hate them.
Crappie fish fry. It don't taste any better.
