    Salt and pepper with the right smoke on a good set of ribs works remarkably well.

    Just add sauce.

    I don't always go that light, but when I do, I again question whether I really need a 10 plus ingredient rub.

    I make my own brown sugar based dry rub. I’ve tried numerous store bought rubs but none come close. You CAN use a sugar based rub as long as you keep temps in 225-250 range, which in my opinion is the only way to cook pork ribs.

    I really like most I have tried. A lot of Meat Church rubs have sugar in them. I really like Holy Voodoo from Meat Church, and Malcolm's The BBQ Rub. If you keep temps low and slow, they generally won't burn. I've never had any rub with sugar burn.

    I do mine very differently. I take no credit for this recipe but there is one called apple city ribs in a book called smoke n spice. The ribs are soaked overnight in a spice mix with apple cider and then rubbed with a brown sugar based rub just before they go on the smoker. I also make a cider based sauce they have in the book with some mods. I use a lot more cider, more molasses and reduce it a lot more to make it thick and sticky.... For cider I get it at a local apple orchard that does their own pressing. I have tried many rubs both commercial and home made and this recipe is the favorite for us and all our friends. My wife likes them so much she won't eat ribs cooked any other way by anybody.
