    Country ribs

    When done in the smoker do you wrap them as if they were spareribs?

    Don't know about that but I enjoy mine boiled immensely.

    When you say wrap them, are are you referring to wrapping them during cooking using the 2-2-1 method? For country style ribs I apply a homemade dry rub, reserving some of the rub for the liquid baste I apply during cooking (once per hour or so). I apply a generous mop of the baste and then use pink butcher paper to wrap during the 2nd stage. Anything left after we eat is vacuum sealed and frozen to be used in 15 bean soup at a later date.     Yes, but after I got them out and rubbed to marinate I think that is going to be impractical. I am doing 12 lbs.

    I do not wrap mine. I've made them 3 times, each time I covered them in my rub, and then mopped them with some sauce.
