Thanks, everyone seemed to enjoy it. The kings Hawaiian rolls were going as fast as the pulled pork. I like to just grab a plate full and leave the rolls behind.

If I may inquire about your picture, what is the advantage of the smaller mesh over the grill grates?

I bought them when I purchased my grill. They are just mesh matts that I mostly used when I smoke pork butts. It makes transferring the butts from the grill onto the trays a breeze.

It is a convenient but absolutely unnecessary item. I just figured for an extra $20 when I ordered my grill it couldn’t hurt to try it.

I use silicone baking sheets from Amazon. $11.00 for 2 that are 11x16. I use them all of the time when I bake bacon to keep the oven clean. Keeps the mess in the baking sheet.
