    Brisket pricing

    I have always bought prime packers from either Sam’s or Costco, mainly depending just on which store I was in. Friday I went to Sam’s and headed to the meat department to get one. There were only 3 in the case.

    This is where it gets strange. Two of them were choice and were priced at $6.38/lb. The other was prime priced at $4.28/lb! I grabbed the prime before anyone else could and forgot about wandering around the store.

    What’s up with that? There didn’t seem to be any difference in the amount of trimming that was needed.

    Been like that for awhile. Can’t say why. Had to do a pork cook last Saturday and had to go to 10 places to find 8 butts

    Why would prime be 33% less than choice?

    Costco had prime briskets for a while but now they are choice. Price is about the same. Somebody probably marked the choice wrong.

    I am sure there are plenty of people who don't know what that really means, and they think they should pay a premium for it.

    I generally look at the brisket first and pick the one I want. Price doesn't matter as much as having a good piece of meat.

    As mentioned, some prime cuts are really inexpensive currently.
    Suggests we're seeing something from 2008, restaurant declines.
    We have access, currently, to prime brisket & short ribs for less.

    I don't think it was a mistake, Sam’s here had the same pricing, prime less than choice. Otherwise big coincidence.

    Having raised, butchered and eaten cattle for many years, I wouldn’t pay the least attention to prime or choice on brisket. The difference is marbling, and I’ve never seen a brisket that didn’t have plenty of fat regardless of grade.
    If you have integrity, nothing else matters. If you don't have integrity,
    nothing else matters.​

    Ship it ... we use WF and have zero complaints.
    Some items are less than stores, some not.
    Same for quality. Read the reviews and decide.

    Wild Fork is JBS, largest processor worldwide.
    We have retail stores here, but they do ship.

    Thanks TampaJim ! just sent them a msg ! Up here in Mass. on sale we may see $6 a lb on special sale but usually 8,9 to 10 a lb for brisket ! The prices on the other meats are like holy smokes good ! Thanks again !
