I think you can find cable info imprinted / stamped on the cable and just look it up. That is what I did when I replaced the cables on my 96 champ a few years ago.
Response assuming you mean old school manual steering cables

Want to replace the "Safe-T- Steering" with a "No Feed Back" system. Want to order it before I pull it out, making it a 1 day project ,rather than wait a week or 2 after I figure what size I need. Will call Ranger tomorrow ,maybe they will have some info .

I called ,they said I need an 11.5ft steering cable . Isn't that an odd size ? Should I go with a 12ft cable ?

Yes, doubt you will ever find a steering cable that measures 11.5. I have been in the boat business for almost 40 years and have never seen or heard of a cable 11.5 ft. Control cable maybe but never a steering cable.

Called them again, both customer service people responded with the same answer , will need an 11.5 ft steering cable. There is nothing wrong with the cable ,just the steering helm is "loose"(pulls to the right) .So ,should I just replace the helm for now? Thanks in advance for any & all advice.
