Wife got me a blackstone culinary griddle gave it to me yesterday so I could assemble it and season it. Did my first cook on it this morning bacon some bell pepper and onions mixed some of that into the hash browns cooked up some mushrooms mixed it with the rest of the peppers and onions then mixed into scrambled eggs and melted cheese into that. Was awesome. Sure wished I would of got one years ago.

All sizes are good! I have a 17” for camping and a 28” for home. Sometimes the 36” would be nice, but sometimes I’d want even bigger if it was available.
If you have integrity, nothing else matters. If you don't have integrity,
nothing else matters.
Where/how do you plan to use it and how many people are in your house? I personally wouldn't get anything other than the 36" unless you are using it camping or tailgating and you need it to be easily portable.
We have a 28 and two 36. Been times we've had all three going at once. My daughter is going to get her one of the new electric ones. I bought the 28 first. After the first time I made cheesesteaks I knew I needed a 36.

Mine is 30 inch does what I need since its just the 2 of us.
Have the 28"myself and it's all I need.
Man I am loving this thing done salmon cod smash burgers omelets you name it haven't used the stove since Thursday.
