    Omelets

    A good many of us own flat top griddles. I cook breakfast almost everyday on mine. For the most part it is two pieces of bacon and two eggs for my wife before she goes to work. On the weekends we do omelettes. We do a basic Denver Omelet most times. I keep chopped smoked ham in the freezer, onions, red and green peppers, mushrooms and cheese. We like a mixture of cheddar and colby jack.
    We also prefer to cook or veggies before putting them in the omelette. If my son if fishing a tournament I wrap the omelette in a burrito shell and roll it up with some salsa for him to eat after he launches the boat. Some days he takes a whole cooler full and sales them. Most time he makes his entry fee back.

    For those of you that have a griddle and those that might be getting one for Fathers Day, what do you like in your omelette?

    Good thread. I am not a huge egg eater but I do like an omelette occasionally. I like bell peppers, onions, mushrooms and spinach in mine.

    Anytime the wife and I have leftover fajitas from a restaurant she'll use it to make us an omelet the next morning. We normally order large just for that reason.

    Put some bacon grease on the griddle, cook the meat/veggies for a bit, add the eggs, enjoy!

    I don't make omelets a lot but when I do mine are pretty simple
    3 eggs
    sharp chedder
    mushrooms
    crumbled up sausage or country ham
    chopped jalapenos
    and hashbrowns on the side "crispy" with a little Texas Pete

    Pick whatever vegetables you like and proteins. Once the omelet is done, put some salsa on top and spoon of sour cream.

    Sausage, onions, cheese. We usually have those ingredients available. For that matter, we do the same for dinner often, just put in on a burrito tortilla. Breakfast wrap with a touch of salsa or hot picante sauce

    I've only destroyed eggs on the Blackstone once. I don't think I had cooked enough on it when I first got it to get that nice seasoning on it and they got all messed up. I've had it 6 months now, probably time to give them another shot.

    A real nice light weight omelette my wife and I like is: bell pepper (color of your choice, we prefer yellow or orange), onion and feta.

    Aside from that deli turkey and cheddar.

    The wife and I will make a 3 egg omelet and we add diced green bell pepper, onion, mushroom, banana pepper, ham and shredded sharp cheddar cheese. I add small amount of garlic to mine but she does not like it in hers. Two pieces of whole wheat toast, an avocado and glass of green tea... I call it the breakfast of champions and porn stars. I took the picture before adding black pepper and lime juice to my avocado.

    I've been meaning to get a griddle and do make omelettes on the weekends. Also reminded that I need to smoke a ham. I use chopped ribeye steak - cheesesteak meat, love onions, blended taco cheese (I know this is crude and I'll try better), sometimes bacon. Need to incorporate mushrooms and peppers.
