Peach will go good with anything. I like a stronger wood for brisket but I use fruit wood on everything else. Use that peach on a peach cobbler in the smoker

Peach, pear, plum. It’s all good. I save all the prunings/deadwood from my trees. As far as what it goes best with.I just keep it all and throw it in with whatever is going into the smoker.
Anything but pine tastes good.
