Chicken Fricassee!!
I follow this recipe with a couple tweaks it's one the wife and I's favorites. Today I had 8 thighs for about 6lb. On the trinity, pope, and garlic (onion, bell pepper, celery, garlic, then green onions) I use double of each. I remove the skin then season the thighs with Slap Ya Momma Hot before dusting with flour. Once I add the vegetable and chicken broth mixture to the roux I season with original Slap Ya Momma and as many dashes of Louisiana hot sauce as you like I also only use one cup of water vs his two.. Taste the gravy to see if anything else is needed. Add the chicken bring to boil, lower to simmer. Cover, ready in 2 hours. Of course you have to serve with rice.
