    Speaking of omelettes have you ever had a

    Burrito omelette?
    I do this mainly on the Blackstone because it gives me more room. I have all my items cut and ready
    Apple smoked ham and bacon
    Onions
    Diced tomatoes
    Colby and cheddar cheese
    Bell peppers with a few hatch chilis mixed in
    Sour cream
    Salsa
    mushrooms

    This is where the warming rack that Blackstone has is real handy. It goes all the away across the back of the grill.
    On left side of the grill I put a burrito size tortilla down to heat. On the other side I pour eggs out on grill. When they start to firm up I put in all the goodies that anyone wants. Flip the tortilla. Fold over omelette in half. Spread sour cream on one side of the tortilla and place it down on omelette. Then use a big spatula and pick everything up. Roll tortilla up like a burrito and wrap in foil and place on warming rack. While you are fixing more all the cheese will be melting in the wrapped one. We make enough to run some down to our cousins at the dairy farm

    That sounds delicious.
    This morning I’ll be having a 3 egg omelet with a sprinkle of sautéed onion and red bell peppers, Colby Jack cheese, and chopped brisket. Served with two slices of toast (Dave’s Killer Bread).

    A bit healthy, a bit unhealthy, definitely delicious and definitely a gassy aftermath. I s'pose you could substitute some broccoli in there too.

    Omelets are great when you are wanting a big breakfast to start the day. There is always some ingredients around to experiment with. Made some chicken tacos the other night and for breakfast the next morning I used the chicken and a few other things to make a hearty omelet. I will make them for dinner some times.
