    Venison Chili Question…

    A guy gave my son a couple pounds of ground Bambi meat. He wants me to make chili tomorrow. Do I make it straight up or mix it with pork or beef? It’s been many years since I’ve made it. I like wild game so that’s not an issue. Thanks.

    I cut it with beef, normally 70 venison/30 ground 80/20

    Straight up. When you cook it add some butter to the pan or it will stick.

    I make more venison burger than beef. For chili, just make it straight up but add some oil to keep it from sticking. I would not drain it either. I personally prefer black beans if you are going to add beans.

    I through in a half pound of homemade chorizo to add some fat. Came out really good. Thanks for the ideas.

    Fat is needed if you cook venison using a lot of techniques but in chili there is no need to add any additional fat. Just brown it and add it to the chili.
