    Brisket today

    Smoked a Brisket Today. Smoked it for 11 1/2 hours with nothing but black course pepper and salt. I used post oak and pecan wood. Really turned out good!

    Looks Great!!...how many pounds? was it just a flat or whole brisket?

    It was about ~12.5 pounds before I trimmed and prepared it. It was a full brisket, what you see in the background was just getting into the point, that was the flat that I had sliced up. I’m guessing I probably trimmed at least a couple pounds off of it.
