yep, kosher salt and black pepper. Only other thing I put on beef when smoking is onion powder and garlic powder, if I’m being adventurous and fancy

If you do any online reading, most of the successful barbecue pit masters will tell you on brisket coarse salt and pepper - maybe a little garlic, that’s it. My last brisket was all salt and pepper and turned out great. I used about a 2 to 1 ratio, two parts pepper one part kosher salt. I agree with their advice.

Per Aaron Franklin: coarse kosher salt and 16 mesh black pepper (not freshly ground), equal parts...delicious!!!

I'd start with the salt and pepper as described. Then maybe indulge more in the future.

I tried Meat Church, I was disappointed. Must just be me because it is very popular. I still have a couple basically full bottles. I guess I should try again. I only used it on ribs.

I use Honey Hog exclusively on ribs. My wife prefers it but I add some cayenne pepper on mine.

I tried Hey Grill Hey Kosher Salt, Ground black pepper, and garlic powder ! Best I have ever had, but then I'm a newbie on brisket ! She says smoke for about 5-6 hrs, then put in parchment paper to finish !
