If you do any online reading, most of the successful barbecue pit masters will tell you on brisket coarse salt and pepper - maybe a little garlic, that’s it. My last brisket was all salt and pepper and turned out great. I used about a 2 to 1 ratio, two parts pepper one part kosher salt. I agree with their advice.

I tried Hey Grill Hey Kosher Salt, Ground black pepper, and garlic powder ! Best I have ever had, but then I'm a newbie on brisket ! She says smoke for about 5-6 hrs, then put in parchment paper to finish !
