    Petite Shoulder

    Nice, inexpensive, little cut of beef that you don't hear a lot about. Season and cook on the grill much like you would a steak, let it rest for about 10 minutes and slice into medallions.

    Love those plates.

    Interesting cut of beef. I see them at Sam's called a petite tender fillet pre seasoned. Have to try and find one.

    They are about as big around as a pork tenderloin but a little shorter. Usually packed 2 to a package and cost about $6.00 - $7.00. My wife and I usually split one but we are not real big eaters.

    I did some looking around for this and the butcher said it's known as the Teres Major. He had it labeled as Tender Lean Steak in the meat case. It was kinda spendy here, $16/lb.
