    Hatch Green Chili Yesterday

    I did a box of green chili yesterday. I first blacken them, then sweat them down in a large bowel to loosen the skin then freeze 8 to a bag. When I am ready for a bag I thaw them and clean them at that time. At least this was the way I was taught to do them having been born in New Mexico. Hopefully the picture come thru it my first time to attaché pictures.

    My wife and I did 35 lbs this week. We roast them then remove skin and seeds before vac. sealing and freezing. I like them is about anything.

    Homemade hatch cornbread is the best. I add cheddar and bacon also.
