    Looking ahead for the weekend. It's been a long time

    Think I'll do some blackened fish with dirty rice. Getting plenty of tomatoes and cucumbers now probably chop some of those up add some red wine vinegar, basil and salt. Probably get enough to do fish tacos on Sunday

    I love doing blackened fish tacos with a pineapple mango salsa and MJ cheese. Only problem is that I keep having to buy tilapia to do them instead of catching a mess of crappie! I like Paul Prudhomme's blackened redfish magic but usually do his seafood magic cause it's not quite as spicy (for the wife and kids)

    Both sound delicious. I have also topped blackened fish with either a craw fish or shrimp Cajun cream sauce that works well
