    Guess my question is will the new steering assy accept the old switch. The wires that come from the switch i assume go into some sort of unit that allows the wheel to turn without twisting the wires. Hope that makes sense

    You're ok leaving it in. Its wired to the throttle lever and then to the trim switch of the motor. I can't imagine how it would be connected to the steering cables

    The wires from the switch go into a plate under the steering wheel so i guess what im saying is will the round plate that is under the steering wheel mount back to a new hydraulic setup

    So looking at your pic, what happens to the taped wire that is on the steering wheel when you turn the wheel?
    Mine was on a heavy cord and wrapped around the steering wheel hub.

    This trim lets the wires “spin” around the hub when you turn the wheel. The contacts are inside that small hub. They weren’t known for lasting very long just from they way they were designed. If it still works, I imagine it will work with a hydraulic helm. If not, a blinker style switch can be had fairly cheap.

    so my question is will the trim assy that is around the steerin shaft fit on a new hydraulic setup, it looks like there is a plate were the trim wires attach that allows the steering wheel shaft to turn and keeps the trim wires from wrapping around the steering shaft, hope this makes sense to someone.
