Most of us have seen dramatic improvement in speed and especially handling by raising our engines to the 3rd hole regardless of the prop we are using. Your top end will be right at 50 mph with the right combination of prop and engine raised to the 3rd hole.

My 2017 190 with a 115 pro xs will hit 47 mph from the factory.
My experience with the stock 21 pitch prop with the motor raised to the 3rd hole was that it sucked. I had bought the 19 pitch X7 and raised the motor to the third hole. After raising the motor but before I installed the X7 I took my boat out with the stock prop and ran it. Not good, handling was sloppy. I installed the X7 and was able to hit 49+ with great handling.
In my boat with the stock prop and the motor all the way down I could get 46 and stay stable but by the time I hit 48 MPH (all speeds by GPS) the handling went to heck. IMO your boat should easily beat 43 MPH in stock form.

Only raise it if you have a stainless prop. I lost 2 mph raising it from the 2nd hole to the 3rd hole with an aluminum prop, I gained 2 MPH doing the same thing with a stainless prop.
It's hitting around 43 max with motor trimmed 1/4. Motor all the way down around 38.
Just ran my brothers new 2021 PT 190 and he just added the Spitfire X7 and it hit 48.7 into a slight current, he plans on raising the motor but hasn't yet.

If I trim my motor as high as it will let me i get aroud 6000-6100 rpm's and speedometer on my graph shows around 40-41 mph

If you are running the stock 21 pitch prop you have some serious prop slip, in the area of 30% according to the mercury prop slip calculator. Perhaps you are applying too much trim and are cavitating. When my set up was stock I could hit 48 MPH but the handling got real squirrelly.
