Tahoe, Lexus GX, 4-Runner.
All those are body on frame SUV's with plenty of power to pull and stop your boat. Just go drive some SUV's and buy the one that you like the best.
I had a Yukon Denali in which I liked pulling a boat with. Any Tahoe or a Yukon will do. But seeing how you have a metal boat, a 4runner would be a good vehicle to have too, don't need a V8 to pull tin.

My 06 Explorer V6 towen my javelin all over with bow issues other that suckin gas like a nitro dragster

Dodge Durango. Same exact vehicle as the Jeep GC without the leather and fancy tech so it’s quite a bit cheaper. (Think chevy/GMC, or Toyota/Lexus, same vehicles, just different body and luxury items).
I tow with a 2014 v6 Durango and get roughly 17-19mph towing, 19-22mpg in the winter and 23-25mpg summer driving. Tow capacity is 6200lbs and will tow that tin boat just fine. Plenty of interior room and with 75k miles on it, it’s never seen the inside of a mechanics shop other than tires and breaks a couple years ago

The Ford Explorers with the most hp (365 hp) will be ones with a 3.5L Ecoboost. Unfortunately, the 3.5L Ecoboost is only available in the Sport and Platinum models. Other high hp mid-size SUVs are the V8 Jeep Grand Cherokee and V8 Dodge Durango. They both are rated to tow 7500 lbs.

I have a 2.7L ecoboost F-150 that I pull my RT188. The motor does great with it. If I keep my speed at 70 or below, I'll get about 14-15 pulling the boat. When just driving around town I get 19.5 mpg. I'm not sure what other vehicles Ford offers that motor in, but I did notice it is an option on the new Bronco.
The best way to cheer yourself up is to cheer up someone else.
I have a 2018 Nissan Frontier, crew cab, 4x4, 5' bed. 4 liter V6 261hp, 5 speed, 6,000 pound tow rating. I love it.
The new ones have a 3.8liter 310hp, with a 9 speed transmission, 6600 pound tow rating.

I’ve got 2015 v6 Durango that has fit the bill nicely for us and is worth looking at.
