    Need good cornbread recipe

    Wanna make cornbread this weekend. Need a good recipe. With the cast iron...

    If I googled or you tubes it, then I would not get a better recipe here afterwards. I am skipping a step.

    2 boxes of Jiffy and 1 box yellow cake mix-yummy! Might need two cast lron skillets. My wife made it in a 13X9

    2 cups Matha white buttermilk corn meal any yellow corn meal will work
    2 eggs
    a pinch of salt
    Buttermilk

    Heat oven 450 and put cast iron skillet in with about a 1/4" of oil in it
    Mix meal and eggs and buttermilk until really creamy not runny
    When oil is really hot pull out and pour some in the mixture put skillet back in oven
    Stir the oil into the mixture until blende then pour it all back into the skillet cook for 24 min and check if done.

    You can whatever you want in the first mixing.

    Melt some bacon grease and put a little in the batter. Grease your iron skillet with it as well.

    Heat the cast iron skillet up in the oven first and add butter before the Corn bread mixture..

    My wife uses this corn meal and cooks it in a cast iron skillet. Comes out great.

    The recipe above on the back of the Quaker box is how I make mine, except 1 cup each of flour and cornmeal and instead of skim milk use real milk. The sugar is optional. Some like sweet cornbread and some don't. My wife wants hers to be so sweet it tastes like a cake. I agree Jiffy Mix is good but it does taste just like a cornmeal cake it is so sweet.

    I use Jiffy as well. I also add about 1/2 cup of canned creamed corn to it also with a pinch of crushed red pepper flake.

    The wife and I have experimented with multiple cornbread recipes for 35 years. We've found we can't beat the Zatarains honey mix.
