96 209 Prop shaft to pad setup

I have a 1996 209 with a 2007 225 Optimax with 26" 4 blade fury. When I upgraded the motor a few years ago, I had a hydraulic jack plate installed and it really hasn't been quite the same with little bow lift compared to the past, the rear lifts and at 4,900 rpms, I hit 62mph and she is done before the stern starts skating.

Thinking the loss of setback (four less inches) compared to the stock manual plate could be the cause.
Hydraulic pump is now seized up so I'm putting the manual plate back on.

Where do I begin with the prop shaft setting below the pad?
1996 Gambler 209 GE. 2007 Mercury Optimax 225.. Sitting on a modified 2015 Ranger Trailer. Ultrex TM, twin power poles. 4 Helix G4N graphs with Mega Live and Mega 360, NextGen Lithium batteries with stealth charging system. Like the Frankenstein of old boats!
