I do a reverse sear prime rib. 45 minutes on the smoker at 225, then do a super hot sear on the grill once on each side. Prep with kosher salt, lee and perrons, and pepper. Get to room temp before smoking and I use applewood chips with a little bourbon in the water pan. I cut the prime rib to 1 1/2 inches before the process starts.
