Yeah, I wouldn't ever smoke a beef roast to 200°....
Beef shoulder cuts are lean. Low and slow does next to nothing but make shoe leather. I prep them with a good steak rub. I like Big Poppa Smokers stuff, but Montreal Steak seasoning or just SPG is fine. Smoke them at @ 275-300° till it's 125° in the center. That gives me some medium slices on outside, then some mid rare and rare slices deeper in. Serve with some au jus.
