1. and 2. Disconnect hoses from thermostat covers, or at the adapter plate.
3. Yes, a thermostat is different from a Poppet valve.
4. One Poppet valve, bottom starboard side. You don't have a poppet valve problem.
5. Yes you have a compressor strainer that will need maintenance performed.
You should buy a Genuine Mercury Marine Service Manual if YOU are going to perform service and maintenance.

Savages Post #36 gave you the right answer, you just proved he was correct, I would recommend you just replace those stats, Stats can be damaged if not tested and cleaned properly, If motor does no come up to temp in less than 5 minutes it will alarm. Learn to watch the temps during warm up and you will get a feel for when they need to be cleaned and inspected, when testing do not suddenly drop them into 160 + degree water and do not let them set on the bottom of the heating pan. I don't recommend the average person with no experience start prying or taking them apart either

You were supposed to pull dump hoses on a COLD motor.
Thermostat leaking the most on a COLD motor IS the BAD one.
It IS possible to have TWO thermostats with debris, and/or damaged seats.
The motor should come up to 120*-130* within 5 minutes MAX.
Its not a good idea the apply ANY throttle while the motor is on the muffs.
It is also not a good idea to let the water splash all over the coils and wires. You should attach some heater hose to direct the water to the ground.

No, lake temperature has nothing to do with the motors temperature @ idle. The thermostats will open at the temperature of the given thermostat.
Got it, I meant the warmed up motor temp running WOT.

To simplify this:
AT IDLE: We want the engine to reach at least 120 degrees F before ANY acceleration takes place. If it doesn't hit 120, STOP and find out why.
ON PLANE: The ONLY things we are concerned with are that you have reasonably good water pressure, and that the engine is not OVERHEATING. Low temps while on plane are not relevant (there is no thermostatic control once on plane).

Update:16 Apr 21, The pumping the fuel ball issue seems fixed, likely combo of replacing the Fuel Demand Valve (FDV), fuel pump ball, and rebuilding the pulse fuel pump kit all at the same time, so not sure exactly which piece was the culprit.
