Is User Mode set to Advanced under Setup Menu? (just a guess, as I don't have that model)

menu, settings, choose advanced not normal mode, scroll down to demonstration mode, this gives you the off and on modes. choose off mode. exit . done

Like my original post says guys..... There is no option for demonstration mode, regardless of being in advanced mode or not.
I think those older units had automatic Demonstration when no transducer is connected. Should work normally with a functioning transducer connected.
