My fishing buddy bought an Elite T1 and in the box was a micro sd map chip even thought his unit was preloaded with the maps. Could I use that chip in an adapter in my 5 year old gen 1 HDS7?

You can try it without any risk and then you'll know. It may very well NOT function since some of those bundled unit/map chip deals are set up only to function with the bundled set-up.
