Symbols are based on air bladder sizes not arches.
There are hundreds of arches in this screen shot, but just a few fish are large enough to quality for a symbol:

Yesterday, I had two or three large Fish ID symbols on the screen. When I turned off Fish ID, the screen went blank. Not a mark on it. Turned Fish ID back on and the symbols showed up again on the screen. So ????

How would you explain why there was not a spot on the screen to support a Fish ID symbol once Fish ID was turned off? If the symbols were created from fish bladders there should be a spot, arch or something on the screen when Fish ID was turned off.
I would guess you can't change history. You would have to scan the same fish again using FishID on and FishID off to see how it does that.
Do that with Simulator and see what fish locations get the symbols for and then nothing when you turn it off. Then do it the other way.
Just remember that the Simulator recording is history.
