    If you want some really good onion rings get some Vidalia onions or sweet onions if they’re out of season. Slice them 3/8 to 1/2” thick and dredge them in Aunt Jemimas complete pancake batter. Fry until golden brown in fresh oil. They are out of this world good.

    Reminds me of the time I went on an overnight ice fishing trip with the 3 three of us crammed in the front of a pickup for 2 hours. Organizer of the trip decided baked beans with kielbasa fried in onions and green peppers and washed down with a pony keg of some cheap-azz beer would make for a fine supper. He was right but then we started paying for it. It was funny the next day while we were out on the lake with the wind blowing. Then it became a hellish ride home. Bitter cold so you couldn't leave the windows open for long.
