    Jambalaya

    Made some jambalaya tonight with fresh shrimp, scallops and andouille sausage. This time I added Ro Tel chili fixing tomatoes. Wow, very good!

    My mom makes a mean jambalaya that I LOVE. I'd eat the whole thing in one sitting and ask for seconds.

    I had jambalaya for the first time a couple of years ago when I spent 15 days with friends in Buras Louisiana fishing for bull reds. Loved it and the gumbo, they have some seriously good food down there. Will have to try and learn how to make some.

    I’m in, short of the scallops. I’ve tried, just haven’t developed a taste for them. Looks great though. Cajuns sure know how to eat.
