You might look at hardware stores, or woodworking shops. They have various threaded rods and knobs that you might be able put together to make a temporary knob until you find something better....
I think 32Gb is the max. size, which can record a lot. A number of YouTube videos on this and they suggest you keep the file size small so that you don’t timeout when you upload the files.
