What seems odd to me is that your motor is mounted in the middle holes and is still too low. I’m pretty sure that most of them come from the factory with the motor mounted in the middle of the 5...
What hole is the motor mounted to on the plate? Like mentioned sounds like the motor is mounted too low on the jackplate
Problem is you can’t get an 8ft bed with a crew cab 1/2 ton. Best your gonna get is a 6 1/2 foot bed. If you want crew cab 8 foot bed, then you’ll have to step up to a 3/4 or 1 ton truck.

I would suggest you take it to a reputable transmission shop or different Ford dealer and get a second opinion. If the truck didn’t seem to be shifting noticeably bad, and you just wanted a flush....

I have the Ultrex version and use a BFE adapter plate to mount it to the Ghost. However my Ghost is a 52”. Think I have an extra BFE adapter plate if you’re interested.

Most likely you will loose top end speed due to lack of bow lift from the boat being out of balance and your boat will feel more tippy while fishing.
