The resolution of the 8612 is much higher at 1920 x 1080 pixels vs 1280 x 800 pixels for the 1243xsv.
NMEA 2000 is not too expensive. 2-drop starter kit is $86 on Amazon. Not sure how many things you want to hang on it but extending the network is easy. Just insert another T-dropper.

Do you want a heading sensor or a GPS puck? The Lowrance Point One is a heading sensor and a GPS, the Garmin Steadycast is just a heading sensor (but the units have GPS already built into them)....

You have your GPS selected for heading. I forget where it is in the menu but in there somewhere you can select the point-1 as the heading sensor.
Garmin Marine network and NMEA2000 are different ports on your FFs. You can have use both ports simultaneously. You do not need to disconnect anything from your present system to add NMEA2000.

I would recommend a GT50 if you can find one. It has more power and a narrower aperture than a GT52 and produces better images. That is probably the best transducer you can get for the plus.
