I understand smashing the brakes at high speed would cause a lockup but they lock up really easily. Even stopping for a light it can look like i'm slamming on... something isn't quite right.

Trim sender on the motor moves a switch to send it to the trim gauge. Chances are the bolt is loose. look for the black sender bolted under the front side of the motor. Google "yamaha trim sender"...
I should add i've pulled the LU and there's no oil on the main shaft so it has to be coming from the shifter as i do see slight accumulation there.
Are you sure it's not oil leaking down the shifter from inside the cowling... it works it's way down (yay gravity) I've been chasing oil leaking too but it's fairly minor but I've checked everything...
First guess would be to confirm the fluid is full. If you have low fluid then it's going to sound like it's struggling to lift.
