Version 3.80 does not change your CHIRP unit into non CHIRP. What version did your 73sv originally come with?

Kinda off topic, but AFAIK, CHIRP requires the appropriate hardware (built in).
You'll need a copy of the 3.80 firmware, it was available for download from garmin prior to 4.10

I upgraded mine to 3.8 without issue. You can always go back to 3.6 if you 3.8 causes you issues.
