This is what I see with mine, I have the same motor and haven't had any problems. I have change the water pump just for regular maintenance and nothing changed. Havent done the thermostats though.

When I'm on plane running easy or wide open the motor will cut off (like the kill switch was triggered) but it will start back up and run fine. It started doing this about 5 weeks ago and was rare...
If its any help have a 95 Tahoe with 240,000 miles on it. I have replaced the motor but the trans is original and use it for the boat every weekend.
I think they are held in by plastic clips, when I was looking at mine I pushed one out the front from under the console.
