First thing I do is spatchcock.
I start on low for a few hours to get maximum smoke. Then crank up to 350 to crisp up the skin. I pull when breast temp hits 160 and let it rest for 20 minutes.

Use any jerky recipe for it. I slice about 1/4”. Smoke on the Recteq at 180 until done to my liking.
