How do you decide what size hook to use on your plastics? Is it just about fitting the hook length to the size plastic,or are there other factors?

I have been using the Albright,"NOT" Modified Not Alberto ..for many years,,never had an issue. Albertos knot is thicker than the standard Albright,so I am not sure why anyone would want that.
