I've been kind of in the same boat (05 intimidator) and have pretty much determined that I will never own another boat as nice as the one I've got and I refuse to shell out the money the new ones are...
I've got about 45k on my 2019 and it rides and drives great. Now if I start driving in a way that isn't normal for me, it will act "surprised" and shift a little harder.

A 225 turning a 23p to only 5400 rpms? You have motor issues.
The best thing to do to is to come to grips with the fact that you are always going to have a f**king rat eating your hay/feed.

A 27 tempest is not too big for that motor. You should be able to turn that prop around 56-5700 rpms without breaking a sweat. Have the motor checked out to make sure you are indeed getting full...
