The best Canon lens for what you describe is the EF 70-200 2.8L. It's expensive, but it will do the job.

I have the cheap manual adjustment, $29 for two from Amazon version. The got me off camera cheap and allowed me to experiment and learn what I want/need in off camera flash. I have not had any...

I use these Yongnou manual transceivers for Canon because I don't want to spend the money for Pocket Wizard. Here is the link for Nikon version. They work fine for me.
