That was a fun day of shooting film! My speeds were with full fuel and extreme tackle. You can see the crankbaits laying in the floor. I have been extremely happy with the Jag/250 set up.
Make sure all bolts are tight. I have seen stress cracks develop when something isn't equally tightened.
When installing, use stainless hardware, make sure to use ant seize or you can use a bar of soap, grease etc.
The new 2019 Cougar FTD SP is definitely the best bang for the buck. I have the largest inventory in the nation.

Curious why your battery charger isn't on the transom?
Personally, I would put the pumps where the 4th battery would go. I like being able to pour oil in my boat without climbing and crowling around.
Curious as to what the difference is? I have noticed higher speeds in the Caracal.
Twin 26s and a 36v system. You have to mount the pumps over the middle bilge. I made a platenout of starboard.
The hydraulic jack plate is a very useful tool. I would not give up my powerpoles or ultrex for one, but when you get to loading a boat out. I would recommend one.
What gets me is your engine voltage. I've never had a sho that dropped and gained voltage like that.

I would suggest a 52" if you fish deep. If you're a bank beater a 45" is fine. I have a 52" 112 with link in inventory here at Ross Motorsports

Bump board is easy. You can mount the holder underneath the console like the new boats. I did use to keep my dip net in my starboard rod box. Tournament day, I would keep it on the deck.
Hahahaha not always. That would have ended up badly on Texoma this last weekend.
Definitely go with the 52. If you start to hate the trollingmotor you can always cut it down. The mount is slightly longer tho.
